HEVC is the best!, if you dont like it you should trash your aged hardware, but all modern stuff plays it fine and it saves you a ton of space, AV1 is to hard on most of my devices so that's what i avoid but in a couple years i guess...

The former I think is more that it's popular; acepetable to many, made to a decent enough standard. As the manhunt for subtitles, Netflix Japan has the episodes 1 week earlier than anywhere else (including Netflix global) and used to have the English subtitles too but have not since episode 7. This lack of official subs has created demand for unofficial translations.
